Grain free apple cardamom crisp

Its Autumn! The most beautiful season here in Ontario. The leaves changing colours, the smell of the crisp morning air, the perfect running weather and the smell of pumpkin spice in the air. 

With the change of weather… diets should start to change. Its time for the shift into slower eating, heartier meals and foods that can be sourced closer to home.

I love some hearty butternut squash soup, warm mugs of tea, roasted veggies…. Apple crisp?

For Thanks giving dinner I made a grain free apple crisp that was super yummy! So I wanted to share the recipe for those of you that are trying to reduce your grains and carbs and living more of a paleo lifestyle.

*A note on this recipe. This is quite crumbly! So it is great to partner with an ice cream (oh no! Not ice cream! heehee) A great coconut milk based ice cream, cashew or like what I did here a simple banana nice cream!

Ingredients:

Filling:

  • 7-8 apples (This can be dependent on how big your pan is)
  • 2tbsp maple syrup
  • 1tbsp cinnamon

Topping:

  • 1 cup coconut flour
  • 2tbsp maple syrup
  • 1tsp cardamom
  • 1/4 cup monk fruit or xylitol
  • 4tbsp coconut oil

Instructions: 

  1. Pre-heat your oven to 350F
  2. Chop all your apples (You can choose to leave the peel on or off. I encourage you to use organic NON GMO apples and leave the peel on to reap all the benefits of an apple… the peel has the most nutrient density)
  3. Toss them with the maple syrup and cinnamon and pour into your dish.
  4. In a separate bowl mix together the coconut flour, monkfruit and cardamon.
  5. Using your hands mix in the coconut oil and maple syrup.
  6. Add this to the top of the apples.
  7. Cover and bake for 25-30 minutes.
  8. Top with ice cream and savior.
