Chia Seed Parfaits

Hello friends! Are you getting excited for Christmas? The most magical, happiest, BEST time of the year! I’m getting pretty excited!! The only problem with Christmas is the weather…. Here in Toronto it gets pretty cold and snowy. The PERFECT weather for a magical Christmas… but it would be even more magical if it would disappear by the 26th!

To bring a little tropical into the snowy blustery winter I made some Chia Seed Parfaits. Super simple yummy fruity little treat.

I made three different varieties:

  • Blueberry Mint
  • Ginger Mango
  • Kiwi Lime

To make the chia seed pudding: 

  • 1 cup full fat coconut milk
  • 1/2 cup unsweetened cashew milk
  • 1/2 cup chia seeds
  • sweetener of choice to taste (xylitol, monkfruit, maple syrup, honey, stevia)

Mix everything together in Tupperware and leave it overnight in the fridge to thicken up.

To make the puree: 

  1. Blend 1/4 cup blueberries (frozen or fresh) with 5 fresh mint leaves
  2. Blend 1/2 a mango with 1 inch grated ginger
  3. Blend 1 kiwi with juice from 1 lime.

Spoon each of these into a glass jar.

Top with the chia seed pudding and some extra fruit.

 

So simple… so fresh and a guilt free snack to quench your sweet tooth and thirst for warmer weather and summer! I love to have a few of these ready to eat in the fridge for days when I know I wont have much time to prepare any meals.
