If I were to ask you to pick only one dessert for the rest of your life what would it be? I would pick ice cream every single time!! When I was prepping for my last body building competition it was the meal I looked forward to the most for after the show!!
However my stomach really does not like dairy, which is REALLY common for a lot of people! We are not equipped to be breaking down dairy from cows… dairy from our mothers sure… but not from cows! It’s very common to disregard the symptoms you may be experiencing when consuming dairy and thinking its ‘normal’… but being bloated, gassy, acne, psoriasis, sharp tummy pains, brain fog, joint pain (some symptoms from consuming Dairy when your body doesn’t like it) doesn’t have to happen!
Have you ever tried cashew, coconut or almond milk ice cream? Super tasty! i LOVE it, and do not miss cow milk ice cream when consuming this alternative. BUT… its also quite pricey…
So lets make our own!! Super simple, and super yummy! No guilt, your family and friends will love it and so will your tummy!
Here is a recipe for Blueberry Coconut ice cream! I also made some little waffles to sandwich the ice cream in… which isn’t in the recipe but totally try eating it this way too!
- 1 can coconut milk (full fat)
- 1/2 cup coconut milk (or other nut milk of choice)
- 1 cup blueberries (frozen or fresh)
- 1/2 tbsp vanilla
- 1tbsp Maple Syrup
- Throw everything in the blender and blend till smooth
- Pour into a container and freeze!
- This will taste the best the day of, but it will keep in the freezer. Just thaw a little before scooping.
Other option: Pour into ice cube trays to freeze then re-blend when ready to serve.
